God never said the weapons wouldn’t form.

Weapons. They are a hot topic today. They are used against us and they are used to protect us. They are necessary and they can be detrimental. I am not here to debate gun control except to say I would be happy to have a weapon to defend myself and my family if it came down to it. I pray that right is never taken from us!

Last November, in the three simultaneous terrorist attacks in Paris, one occurred in a cafe. Absolute chaos had taken over as people scrambled to escape. Some were hiding under tables, chairs, under the counter, wherever they could find a place of escape. One woman was hiding by the front door when one of the terrorists approached her with aAK-47 and he put it to her head and pulled the trigger.

It did not fire.

In stunned disbelief, he lifts the weapon away from her, instead of firing again, and walks away as she runs out the door.

At the end of that day of carnage, 129 people had perished.

No weapon that is formed against you shall prosper; and every tongue that shall rise against you in judgment you shall condemn. This is the heritage of the servants of the LORD, and their righteousness is of me, says the LORD. Isaiah 54:17

Just reading this scripture, we could surmise that what that woman in Paris experienced that day is what every Christian would experience and benefit from every day of their life.

The verse doesn’t say the weapon won’t form, it doesn’t say it won’t be put to the test, or that the enemy won’t come after us with his fiery darts. No, it says the weapon will not prosper.

Let’s look at that as well. If we took that at face value, we would say or assume that a Christian would never be killed by the enemy or a terrorist or anyone else. That God would intervene and jam the chamber on every weapon. But we know that doesn’t happen. We know bad things happen to good people, the righteous have been crucified, the disciples all gave their very lives, and many thousands of Christ-followers since then have perished.

So, what does it mean?

I think we have to look at the verse before this one to break it down.

See, it is I who created the blacksmith who fans the coals into flame and forges a weapon fit for its work. And it is I who have created the destroyer to wreak havoc…

Who is in control here? The One who created the blacksmith that forges the weapon for the work! And that craftsman is under the Lord’s control. He ultimately decides if and when a child of God is taken out of this world and no matter the weapon, if it is not God’s time, it won’t happen.

Albert Barnes, Notes on the Bible, says it well:

Behold, I have created the smith – The sense of this verse is, “Everything that can effect your welfare is under my control. The smith who manufactures the instruments of war or of torture is under me. His life, his strength, his skill, are all in my hands, and he can do nothing which I shall not deem it best to permit him to do. So with the enemy of the church himself – the waster who destroys. I bare made him, and he is wholly under my control and at my disposal.” The smith who bloweth the coals, denotes the man who is engaged in forging instruments for war, or for any other purpose. Here it refers to him who should be engaged in forging instruments of battle to attack the church; and why should it not refer also to him who should be engaged in making instruments of torture – such as are used in times of persecution?

I have created the waster to destroy – I have formed every man who is engaged in spreading desolation by wars, and I have every such man under my control (see the notes at Isaiah 10:5-7; Isaiah 37:26-27; Isaiah 46:1-6). The sense here is, that as God had all such conquerors under his control, they could accomplish no more than he permitted them to do.

So what is it in your life that has you in turmoil? Are you facing persecution? Is your job on the line? How about your health or that of a loved one? Relationships? Children away from God? Anxiety? Insomnia? Worry about the future? The state of the world?

It may seem as if the enemy is having a field day, so to speak. But he can only do what God gives him time and space for and just like Job, he cannot take our lives, only God has the power to do that. Does that mean we are completely out of danger because we walk with God?

Christians die too. We are all appointed to leave this life at one point in time but the good news is that we don’t check out until He says so! He is ultimately in control! He not only decides whether the weapon is used against us, He decides who forges the weapon! And that enemy, that weapon, can do nothing unless God says so.

If that doesn’t bring comfort to you, I don’t know what will. Our God is sovereign and yes, even though we live in a broken and sin-filled world, and we will until Jesus comes, that is the hope…that He will come again, we will have a way of escape whether it is here in this life or in the catching away…we win because He won.

Knock-your-socks-off Carrot Cake!

With the holidays upon us, the baking frenzy has begun! I am not a great cook but I love to bake…my figure and shape attest to it.

While we were overseas, I baked every Tuesday and Thursday for my Latvian house church group and our English Club. They enjoyed trying new things and I loved to see their happy faces when they tried graham cracker crust or Oreo dessert for the first time. I would even pack my suitcase with delicacies that I could not find in the Baltics…anticipating all of the things I could make for them. This cake is one that they literally ate up!

By far the very best Carrot Cake…EVER…I  have made this one for almost 30 years, borrowing the recipe from an old friend, Betty Shields. We worked together back-in-the-day and she had published her very own cookbook at the urging of her friends and family.

I have literally abused that poor book! I was a newlywed then and not a very good cook. I have tried almost every recipe in there and all of the tips that go along with it. She was fabulous; bringing in her desserts to our Re/Max office and causing us all to gain a few pounds.

I lost contact with her years ago but her recipes live on in my kitchen. You will enjoy this super-moist and absolutely perfect carrot cake for many generations to come. It’s a keeper!

Knock-your-socks-off Carrot Cake

The great thing about this recipe is you literally put the ingredients in a bowl and mix by hand all at once….that’s it!

I have included the original copy (you can see how USED it is!) and also listed the ingredients for you to make it easier to read.

1 1/2 c. corn oil
2 c. sugar
3 eggs
2 c. flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
2 teaspoons vanilla
1 teaspoon salt
1 c. coconut (optional!)
2 c. shredded carrots
1 c. chopped walnuts or pecans
1 small can crushed pineapple

Mix all together in one bowl, pour into 13×9 pan, sprayed with baking spray. Bake at 350 degrees for about 40-50 minutes; until done, or toothpick comes out clean. May frost with cream cheese frosting.

Cream Cheese Frosting:
1/2 C salted butter
1 8oz Cream cheese
1 tsp Vanilla extract
1/4 C milk
4 1/2 C confectioners/Powdered sugar

Let cream cheese and butter soften at room temperature. Mix together first four ingredients with one cup of powdered sugar…then slowly add the rest until desired consistency. Delicious!

Making your own coffee creamer…no cans or preservatives!

Good coffee is not hard to find in Europe. The varieties are endless and seem to change from country to country. I have had coffee and lattes in Norway, Estonia, Latvia, Poland and France, each of them a bit different and unique. Here in Tallinn, I had a most delicious small latte this past week for one euro! What?! That is rare, to be sure, but I definitely book-marked the spot in Old Town. If you want to read about why we are here and see other pictures of Tallinn, go here, and here!

One of the main differences is SIZE.

Unless there is a Starbucks nearby, and in the Baltics there is not, I have not found gorilla-sized lattes, frappes and cappuccinos. Everything is “normal”, as they like to say here. That, friends, is a good thing. Most of their drinks are not laden down with heavy syrups or flavored creams. I can handle that too! I just need one sugar and creamer and I am good, if the coffee is also good.

I brought a few individual International Delight French Vanilla creamers with me to Northern Europe. Okay, I brought an entire box. But it is not enough to last eight weeks. So what to do? The only coffee creamer I can find in the grocery stores here is plain and unflavored. That’s no fun when you are used to a cascade of vanilla’s, cinnamon, sweet cream, Girl Scout mint, amaretto, Belgian white chocolate macadamia, Irish Crème and the list goes on and on and on! Do I dare mention the name brand names, York Peppermint Pattie, Coldstone Creamery, Almond Joy, and Cinnabon! Gee whiz!

So, needless to say, morning coffee time was going to get boring, very quickly.

I have seen countless DIY instructions on Pinterest so, why not me?

I have made my own vanilla extract overseas (super easy and soooo much better!), my own ranch dressing (decided to bring Hidden Valley seasoning packets in my next suitcase), my own cream of chicken soup (kick Campbell’s out of the kitchen!) and always have to make my own whipped topping (taste the difference!). Why not creamer?

Friends, this is too easy! Someone is making way too much money off of coffee lovers around the globe with needlessly expensive, flavored creamers!

There are hundreds of recipes using sweetened condensed milk floating around the virtual bulletin boards; mine is NOT made that way.
  • First, there is no such thing in Estonia.
  • Second, I didn’t want anything from a can!
  • Third, I am a honey fan.

No cans, no additives, no preservatives. Not only is this recipe easy and delicious, it is nutritious; if you don’t count the heavy cream. There are no “processed” sugars, powders or canned anything. (smile) Even better, you could use Almond Milk, one of my favorite substitutes for regular milk! It tastes so good! We do have that here in Estonia.

Follow this recipe and tweak it to your own taste. Then, begin experimenting with the different flavors! You can halve the recipe as well, if you don’t want to drink the same thing forever and a day.

Creamer

Did I mention that the sweet missionary’s home I am staying in also has a coffee grinder?! Yikes! I am enjoying grinding my own beans every morning as well. Coffee connoisseurs look out!

Here is the basic base recipe and then several flavor varieties.

RECIPE
1 cup Milk (2% or skim is fine)
1 cup Heavy Cream
2- 3 T. raw honey (you can also use pure maple syrup!)
1 ½ tsp. real vanilla extract
Heat all ingredients just until the honey is dissolved well. Store in Mason jars or other see-through containers. Mark the date, or don’t forget the date on your milk, should keep a week refrigerated.
Now for the extras! Begin with the base and add in the flavors.

Vanilla Caramel – 2 T caramel topping, 2 tsp. vanilla extract

Cinnamon – 1 tsp. vanilla, 1 T. ground cinnamon

Chocolate Almond – 1 T cocoa powder, 1 tsp. almond extract

Irish Cream – 2 T chocolate syrup, 1 tsp. instant coffee, 1 ½ tsp. vanilla extract, 1 tsp. almond extract

Pumpkin Spice – ¼ cup pumpkin puree, ¼ cup pure maple syrup, 2 tsp. pumpkin pie spice, 1 tsp. vanilla extract…whisk this all together with the milk and cream, heat just until simmering. Cool, store in refrigerator.

Gingerbread – ¼ cup molasses, 1 tsp ginger, ½ tsp. cinnamon, ½ tsp. ground cloves, ¼ tsp. ground nutmeg, 1 tsp. vanilla extract. Again, simmer until heated together, cool and store in refrigerator.

Eggnog – 1 ½ tsp. nutmeg, 1 ½ tsp. rum extract.

Peppermint Mocha – 1 T cocoa powder, ¼- ½ tsps. Peppermint extract. Begin with the ¼ tsp…be sure not to get too much! Heat to simmer, cool, store in fridge.

Almond Joy – 1 T. coconut extract, ¼ cup chocolate syrup

Hazlenut – Start with the same cream base and just add 1-2 tsps. hazelnut extract.

French Toast – Combine 1 whole cinnamon stick, chopped into tiny ½ – 1 inch pieces, with the cream, milk and honey. Heat for two minutes then cover and let steep for 30 minutes. Strain, cool, fridge!
